Energy Ball Carrot Cake

Snack balls of shredded carrots, oats, cinnamon, dates, and almond meal are rolled in coconut flakes and chilled for a great morning or mid-day boost.

Energy Balls

2 cup  Carrot – finely shredded

1 cup  Dates – finely chopped

1½ cup  G.F. Oats

⅔ cup  Almond meal

2 teaspoon  Cinnamon

2 teaspoon  Orange Zest

¼ teaspoon Nutmeg

1Tablespoon  Coconut Oil

⅔ cup  White Chocolate Chips (optional)

⅔ cup  Desiccated Coconut (for rolling)

Yield: 35-40 balls

Cooking Directions: 

Combine all ingredients except chocolate chips and coconut into large mixing bowl.

Stir together ingredients until it holds together.

Mix in chocolate chips (optional)

Form or roll the dough into tablespoon-sized balls and roll in coconut.

Chill in refrigerator an hour before eating.
