Peanut Butter Energy Balls

Quick and easy. Make as breakfast bites for the whole week. Store in an airtight container and refrigerate for up to 1 week.

  • Measure ingredients
  • Place all ingredients in a bowl and mix
  • Shape into a ball
  • Place in refrigerator for 1 hour
Ingredients: 

1 cup old-fashioned oats

1/2 cup peanut butter

1/2 cup ground flax seed

1/2 cup chocolate chips

1/3 cup honey

2/3 cup flaked coconut (optional)

1 tablespoon chia seeds (optional)

1 teaspoon vanilla extract

Cooking Directions: 
  1. Combine oats, peanut butter, ground flax seed, chocolate chips, honey, chia seeds, and vanilla extract together in a bowl. Cover and chill dough in the refrigerator 30 minutes.
  2. Remove dough from refrigerator; roll into balls, about 1 inch in diameter.
  3. Store in an airtight container and refrigerate for up to 1 week.
